They say that what is bred in the bone will never come out of the flesh. The Álvarez family is another of the great pastry making lineages, present in the city since 1938. They are pioneers in many things: e.g. Miguel was the creator of the torte known as Postre Gijonésin 1980. His establishment has trained a long list of young bakers who later went on to become great pastry chefs. It is only fair to acknowledge that he has created a school of his own and that he has been a Master Chef with capital letters.
