No doubt, one of the most demanded rice dishes of Gijon’s cuisine, where some good clams make this rice dish a delicious treat.

Method

Heat oil in a paella dish and add chopped garlic and parsley, then allow to brown. When it starts to brown, add rice, sauté a bit and add clams.

Next, add boiling water. Taste and add salt if necessary. Half way through cooking, after about ten minutes, add dry sherry.

Note: When it is done, rice should be fluffy, but slightly moist.

  • 3 coffee cups of rice (about 300 gr.).
  • 3/4 kg. clams (not very large).
  • 3 cloves of garlic.
  • 1 bunch of parsley.
  • 1 glass of dry sherry.
  • Oil.
  • Salt.
  • 7 coffee cups of boiling water.
