Rice with clams II
No doubt, one of the most demanded rice dishes of Gijon’s cuisine, where some good clams make this rice dish a delicious treat.
Next, add boiling water. Taste and add salt if necessary. Half way through cooking, after about ten minutes, add dry sherry.
Note: When it is done, rice should be fluffy, but slightly moist.
Method
Heat oil in a paella dish and add chopped garlic and parsley, then allow to brown. When it starts to brown, add rice, sauté a bit and add clams.Next, add boiling water. Taste and add salt if necessary. Half way through cooking, after about ten minutes, add dry sherry.

Ingredients
- 3 coffee cups of rice (about 300 gr.).
- 3/4 kg. clams (not very large).
- 3 cloves of garlic.
- 1 bunch of parsley.
- 1 glass of dry sherry.
- Oil.
- Salt.
- 7 coffee cups of boiling water.
