Octopus with collard greens
Not as well known as Galician - style "a feira" octopus or octopus with potatoes, but not less delicious.
Sauté onion, the rest of garlic, carrot and leek, all previously chopped. Once onion browns, add chopped pepper and red wine, let it cook for five minutes adding next the octopus along with collard greens. Let it simmer for about ten minutes, add salt and serve.
Method
Once cleaned , cut octopus into three cm thick pieces. Next, put it in a pan with a thickly chopped onion, a clove of garlic and bay leaves, cover and let it cook for an hour. Meanwhile, cook chopped collard greens in water and salt.Sauté onion, the rest of garlic, carrot and leek, all previously chopped. Once onion browns, add chopped pepper and red wine, let it cook for five minutes adding next the octopus along with collard greens. Let it simmer for about ten minutes, add salt and serve.

Ingredients
- 1 rock octopus about 1 kg. (octopus caught in surrounding coastal areas).
- 2 bay leaves.
- 3 onions.
- 1 carrot.
- 1 leek.
- 3 cloves of garlic.
- 3 red sweet peppers.
- 2 dl. olive oil.
- 1 glass of red wine.
- 500 gr. collard greens.
- Salt.
